Mashrooms Espresso is a project for promoting the recycling of coffee waste in agriculture; it started with a study presented at the showroom "The taste of a sustainable coffee". Out of that study, a pilot project in environmental educatio: "from coffee to proteins" is realized, with the participation of almost 200 students from the Ilio Micheloni Institute that cultuvated the Pleurotus Ostreatus using a coffee waste substratum. After this sperimentation, the Funghi Espresso adventure is started! Nowadays a productive site has been opened in Capannori (Lucca) and many restaurants are buying the produced mushrooms. A kit for self cultivation is also produced and training sessions are organized. The initiative received many recognitions in Italy and participated to Expo 2015.
It all started at the Zero Waste Research Center of Capannoru, where Rossano Ercolini promoted the first feasibility study. Nowadays, the team is constitued by an agronomist, an architect and an etrepreneur.
